Ham with Guinness
Put a large piece of ham in a pan
Add a peeled whole onion
2 or 3 sliced carrots
a bag of lentils or split peas
herps
a half-pint bottle of Guinness
and enough water just to cover the ham
Bring to the boil, cover, simmer according to the size of the ham
(about 2 1/4 hours for 3 lbs, nearly 3 hours for 4 lbs)
If you like, add some potatoes in the last half hour.
Serve the ham in thick slices, with a knob of butter and chopped parsley
add to the strained vegetables.
Unless you are very many or very greedy there
should be some left over for the next day
The ham will be excellent cold
and the rest makes a marvelously sustaining winter soup
either heated up just as it is
or after being pereed in a liquidizer or mouli-grater.
